It only takes one bowl and a few simple ingredients to make this healthy plant-based coconut and berry baked oatmeal. It is 100% sugar-free and gluten-free, perfect for a warm breakfast or afternoon snack. It tastes like a dessert, has a texture of a cake and is super easy to make!
80 grams oats
80 grams / 2 heaping tbsp full-fat coconut milk
1 ripe banana
1 tbsp chia seeds
1 tbsp ground flax seeds
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp baking powder
100 ml soy milk (or other plant milk)
1 handful frozen mixed berries
1 chopped date (optional)
In the bowl, mash the banana with a fork, add all the other ingredients and mix well together.
Pour the batter in a mini baking dish and bake at 180°C for 30 minutes.
