Okay so, we love all kinds of oats here in Tinsyfit family. Cooked oatmeal, overnight oats, oat cookies, oats in smoothies, oats in baking, oats everywhere. But sometimes it gets boring eating the same things over and over again. That’s why I present to you ONE BOWL COCONUT AND BERRY BAKED OATMEAL!
This one is about to change your oatmeal game. It is ideal for meal prepping and breakfast on the go.
So why should you go out of your way and bake oatmeal now you ask? Making it taste and feel like a cake is good enough of a reason I think! This super simple sugar-free coconut baked oatmeal tastes like a dessert. It has a thick texture of a cake and it is wholesome and nutritious for you! Providing you long-lasting energy, protein, fiber, nutrients, and antioxidants. This is a complete meal on another level!
Prepping time for this easy coconut and berry baked oatmeal is next to nothing. It literally takes few simple ingredients + one bowl + 5 minutes and you are done! Throw it into the oven and go play with your pet for 30 minutes.
Everything you need to do here is combining the ingredients in a bowl, then the oven will do all the magic for you. I cook for myself so this is one large serving size or two smaller servings, baked in a mini oval baking dish. Feel free to double or triple the recipe for more people and bigger baking tray!
Every single ingredient of this coconut and berry baked oatmeal is a superfood by itself:

I like to keep my coconut and berry baked oatmeal sweet and simple, but delicious add-ins are:
- chocolate chips
- coconut chips
- nut butter
- dried fruit
- cacao powder
It only takes one bowl and a few simple ingredients to make this healthy plant-based coconut and berry baked oatmeal. It is 100% sugar-free and gluten-free, perfect for a warm breakfast or afternoon snack. It tastes like a dessert, has a texture of a cake and is super easy to make!
80 grams oats
80 grams / 2 heaping tbsp full-fat coconut milk
1 ripe banana
1 tbsp chia seeds
1 tbsp ground flax seeds
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp baking powder
100 ml soy milk (or other plant milk)
1 handful frozen mixed berries
1 chopped date (optional)
In the bowl, mash the banana with a fork, add all the other ingredients and mix well together.
Pour the batter in a mini baking dish and bake at 180°C for 30 minutes.
