First thing first, I’m not much of a coffee drinker, but I’m aware I’m in minority here. I like it for the taste sometimes, but it doesn’t do much for me energy wise. So naturally, this smoothie does contain a shot of espresso, I’m not about to distract your ritual, okay, but It can easily be omitted or replaced with cacao powder or even matcha.

But, the star ingredient in this immunity-boosting smoothie is obviously pumpkin! Or more specifically, pumpkin puree. Pumpkin is AMAZING fall vegetable, not only for carving out jack o’lanterns and decorating your house for Halloween but for health benefits as well.

Pumpkins for vegan pumpkin spice smoothie

Antioxidants in pumpkins can protect you from many chronic diseases, and power up your immune system to fight infections and heal quicker. The winter is coming, and we need all the help we can get from mother nature.

Homemade pumpkin puree

I suggest you make your own pumpkin puree instead of buying it. It’s more wholesome and fresh, contains one ingredient and is very simple to make.

Recipe: Bake your pumpkin (halved and deseeded) on 170°C for an hour (depending on the size of your pumpkin). Try if it’s fork tender at about 45-minute mark. Leave to cool down, spoon the meat into the food processor or high-speed blender and blend until smooth.

Pumpkin puree can be used for baking and cooking. It’s also a great alternative to butter and oil in baking vegan cakes or brownies.

Description

This super nutritious, rich and fresh immunity-boosting pumpkin spice smoothie is perfect for fall breakfast on the go. It is packed with plant-based ingredients, sugar-free, and dairy-free, but full of antioxidants and energy-boosting properties.


Ingredients

1 banana (preferably frozen)

200 ml soy milk (or other plant milk)

1 tbsp chia seeds

3 tbsp pumpkin puree

1/2 tsp pumpkin spice *see notes

1 espresso shot

1 tbsp peanut butter

2 dates


Instructions

Blend all the ingredients in a  high-speed blender until smooth and creamy.

Serve and enjoy!


Notes

Make your own pumpkin spice by mixing together: 1,5 tbsp cinnamon + 0,5 tbsp ginger + 1 tsp nutmeg + 0,5 tsp ground cloves + 0,5 allspice
